Cheesy Sourdough Sloppy Joe Rolls

Have you ever been in a rut when it comes to ideas for supper? That was me recently. I tried to experiment a little more in the kitchen to take some of our favorite recipes and change them up a bit.
Don't be fooled by this one - it is NOT dessert, even though it may look like one! I took my cinnamon roll dough base, and instead of spreading butter, cinnamon, and sugar on it, I made our favorite Sloppy Joe meat and rolled them up. After placing them in a 9x13 pan, I added shredded cheese to the top (except for 3, since ONE of my kiddos doesn't like cheese)!

3/4 cup active sourdough starter
1/2 cup water
4 cups all-purpose flour
1/2 cup butter, melted
1 T honey
2 eggs
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
shredded cheese (for top)
Mix starter, water, butter, honey, and eggs in a stand mixer until combined. Add flour, baking soda, baking powder, and salt and knead for a few minutes until everything comes together.
Place dough in a bowl and cover. If short on time, leave in a warm spot for 1 hour. If you want a longer fermentation period, you can place in the refrigerator overnight, or up to 24 hours.

Preheat oven to 375°. Lightly flour your counter and shape the dough into a rectangle. Roll out the dough until it is about 1/4 inch thick, keeping that rectangle shape as best you can.
Spoon the Sloppy Joe meat on the dough and spread out. Gently roll the dough from one side to the other.
Using a steak knife or other sharp knife, slice 14-16 rolls and place them into a 9x13 pan. Sprinkle a layer of your favorite shredded cheese.
Bake for 20-25 minutes. Enjoy!
