3 Ingredient Quick and Easy Sourdough Noodles

With sourdough, the PASTA-bilities are endless!

This quick and easy sourdough noodle recipe uses only 3 ingredients and can be prepared in time for a simple weeknight meal of spaghetti, or fermented longer in the refrigerator to be pulled out the next day for any recipe calling for noodles!
Not a fan of sourdough? No problem! Simply omit the sourdough starter!

Items Needed:
Large Pot
Rolling pin and knife or pizza cutter (if not using noodle attachment)
Ingredients:
1/4 cup sourdough starter (active OR discard)
4 eggs
2 cups flour (all-purpose or fresh milled wheat)
2 T salt (for water)

Directions:
On a counter (or in a bowl), make a well in your flour. Whisk eggs and starter in the center of the well. Use a bench scraper to add the flour in from the sides and together until it forms into dough. Knead dough until it becomes a uniform smooth ball. Wrap in cling wrap or cover with a bowl, and let it rest for 1 hour on the counter. For a longer fermentation, place in the fridge up to 24 hours. Just be sure to bring it to room temperature before rolling out.
Cut the ball into 6-8 equal pieces. Roll one piece at a time, leaving remaining pieces covered, until the dough is very thin. If using a noodle attachment on a mixer, run through the widths until you get to the smallest.

Using a pizza cutter (or noodle attachment), cut noodles to desired width. Make sure they are all separated and lay them out on the counter. You can dry them if you want, but it's not required.

Heat a pot water about 3/4 full on high, add salt, and bring to a boil. Once it begins boiling, lower to medium heat and add about 1/4 of the noodles. Cook for 3-4 minutes and use a pasta ladle to transfer into separate bowl or directly into a pasta sauce. Continue to do this until all noodles are cooked.
