DELICIOUS and Easy Garden Peas and Potatoes

By the end of May, we start itching for some peas and new potatoes, fresh from the garden! This delicious side is very easy to make, and the flavor is so buttery and creamy!

Ingredients:

  • 5 T butter

  • 1/4 cup flour

  • 1 1/2 cups whole milk

  • salt and pepper to taste

  • fresh (or frozen) peas, washed

  • new potatoes

Instructions:

  1. Start by slicing the potatoes into quarters, place on a baking sheet with parchment paper, drizzle olive oil, add salt and pepper, and bake them for 25 minutes at 400°, until cooked through.

  2. Shell and wash fresh garden peas.

  3. Add butter to a small pot and melt over medium heat.

  4. When butter is completely melted, stir in flour.

  5. Slowly pour milk in, stirring as it thickens and becomes creamy.

  6. Once your cream gets to the desired consistency, add salt and pepper to taste.

  7. Add peas and stir.

  8. Take potatoes from oven and immediately add into the cream and peas mixture.

We enjoyed our first batch of peas and potatoes on Memorial Day this year, along with a tender, juicy BBQ Wholehearted Farm brisket. We hope to enjoy a few more servings before our peas are done for the season. :)
